Thicker and woodier herbs- oregano, thyme, marjoram and rosemary are typically added during the cooking process; this allows all of the flavors to meld and enriches the taste. Thicker herb leaves, like those of rosemary can be very pungent and should be finely chopped – used sparingly (according to personal taste) or added whole and removed before serving.

Tender herb leaves, like basil, chives, coriander/cilantro, dill, and parsley should be harvested just before use and added at the end of cooking which helps to retain their flavor. Herb flavours vary; ensure you taste your herbs before adding them to your cooking. Freshly picked herbs will start losing their flavor if stored for days.
