The blades have been professionally "clam-sharpened", meaning the outside of the blade is not sharpened at a flat angle, but to a rounded curve, similar to the shell of a clam. This allows the edge of the blade to be very thin and sharp, and to quickly get thicker, providing strength and stability. This gives maximum sharpness while reducing chips, cracks and damage.
