Complexe en milde smaak van Ceylon kaneel

Ceylon kaneel is een warm kruid dat in Europa vooral gebruikt wordt in zoete gerechten zoals gebak, appelmoes, rijstpap, pudding en chocolademelk. In de Zuiderse en Oosterse keuken wordt het ook gebruikt in gebakken gerechten, bv. in kip en rijst gerechten (zoals het Indiase kip tandoori) vleesgerechten, het Griekse Moussaka en in de hele Chinese keuken.

Lekker verwarmend voor tijdens de koude winterdagen zijn de warme kaneeldranken: glühwein (met rode wijn), grog (met rum), winterkoffies en winterthees, winterse chocolademelk, …

Kassie en Ceylon: wat is het verschil?

Het belangrijkste verschil tussen deze Ceylon kaneel en kassie (Cinnamomum cassia) is het gehalte coumarines. Kassie bevat ca. 2g tot 5g coumarines terwijl Ceylon kaneel slechts ca. 0,015g coumarines bevat. Onze Ceylon kaneel wordt steeds geanalyseerd op coumarines zodat we zeker zijn van de kwaliteit.

De echte Ceylon kaneel is zachter, iets complexer en milder van smaak dan kassie. Ceylon kaneel herken je aan dicht opgerolde pijpjes, kassie is meestal iets dikker en de pijpjes zijn hol. Ceylon bestaat uit enkele fijne laagjes kaneelboomschors, kassie wordt gemaakt van één dikke laag kaneelschors. De meeste kaneel die je in de winkel vindt, is kassie. De diepe, volle smaak van kassie doet het goed bij hartige gerechten, terwijl het fijnere Ceylon kaneel beter combineert bij zoet.

Ceylon kaneel in de keuken

Ceylon kaneel is ideaal bij zoete bijgerechten en nagerechten zoals vruchtencompotes, pudding en bij warme wijn. In het Midden-Oosten wordt een Ceylon kaneelstokje aan zoetzure stoofpotten toegevoegd.

Gebruik van kaneelstokjes

Je kan een kaneelstok toevoegen aan rijst, peren, wok of tajines en laat het stokje mee sudderen.

Heel leuk is ook om een kaneelstok als roerstokje toe te voegen aan warme chocolademelk of glühwein.

First, it’s important to set expectations correctly. This is not a miracle product, and it’s not going to literally shrink pores or dramatically transform the structure of your skin overnight. What it does do — and does very well — is improve the surface quality of the skin. My skin looks smoother, more hydrated, more even, and more refined when I use it consistently. And at this stage, that kind of steady improvement matters far more than dramatic claims. The texture is one of its strongest points. It has a smooth, elegant cream texture that feels substantial enough to moisturize properly, but it never tips into heavy or greasy. It spreads easily, absorbs well, and leaves the skin looking soft and supported rather than coated. For dry, mature skin, that is not always easy to find. I want comfort, but I do not want a cream that just sits on top of my face and makes everything feel overloaded.
