Edamame is the young version of the soy bean. The pods may be picked fresh for eating, or allowed to mature longer for dried soybeans.
Start seeds indoors 6-8 weeks before the last frost or plant outdoors after all danger of frost has passed. The soil needs to be above 55F, as well.
Plant seeds 12-18” apart in full sun, in rich, well-draining soil. Keep soil moist without getting soggy. Stake tall varieties so they don't fall over in windy or heavy rain conditions.
All pods mature at the same time and must be picked within a 3-7 day period. If you wait too long, the flavor suffers significantly. The pods should be bright green, plump, and filled out. If the pods are yellow, they won't taste as good.
For dry beans: Leave the pods on the bush until the leaves turn yellow, then brown, then fall off. This takes 70-100 days for most beans. The first frost of winter ends the growing season for beans. Harvest pods before the first frost.
