(Amaranthus caudatus) Amaranths have long been among our favorite ornamental and edible plants in the garden, their plumed earth-toned seed-heads are the embodiment of the harvest season. Coral Fountains is an earthy, coral pink-colored version of our longtime favorite “Love Lies Bleeding”. You may be tempted to think of it as a dusty or faded rose, instead, it harbors a unique color similar to the red rocks of the Southwest. Impressively sturdy, branching 4’ plants feature long trailing central seed heads that are dramatic in floral centerpieces with smaller, secondary and tertiary branches that make lovely additions to bouquets. Like all amaranths, both the fresh young leaves and mature seeds are nutritional powerhouses.

Edible seeds and young leaves for you and other critters. To harvest seeds, wait until flowers are firm and dry to the touch. Seed will rub out easily in your hands and plumes/stalks may be cut and tarped or hung to dry further. Protect from the birds if you're not into sharing!
Fresh or dried flowers.
Harvest flowers when 2/3-3/4 of them are open. Do remove most leaves as they wilt quickly and removal brings focus to the flowers. Expect a vase life of 7-10 days.
